One-day tour to Budzhak “Gastronomic traditions of Bolgrad” (with a visit to mechana of “Balkans Yastia” and the dairy “Schedra Okolitsya”)


Founded by Bulgarian immigrants, Bolgrad is one of the pearls of Bessarabia, preserving its long-standing gastronomic and wine-making traditions. Feel Bessarabian hospitality by visiting the only family-owned production of meat delicacies in the Balkans Yastia and the “Schedra Okolitsa” cheese factory with tasting craft chefs according to original and traditional recipes.

07:00 –  Group meeting. Departure from Odessa by a comfortable bus. Technical stop in Tatarbunary.

11:00 – Arrival at the dairy “Schedra Okolitsya”. The Budzhak steppe, with its clean air and herbs, has a beneficial effect on the taste of local milk and cheese, and the cheese factory itself is located in a unique place – near the beginning of one of the most famous Troyan shafts in Tabaki village.

By the excursion we will visit production workshops and basements, where cheeses ripen in the cold. The guests will be shown the production process of cheese making, during which all operations are carried out manually. After the tour, you will have a tasting of 8-10 types of traditional and author’s Bessarabian cheeses.

13:00 – Arrival in Bolgrad. A short tour of the center of Bolgrad with a visit to the Pushkin`s park.

14:00 – Arrival to the mechana “Balkan Yastia”. During the production tour, conducted by the founder himself, Sergey Rusev, you will familiarize yourself with the process of creating meat delicacies, take part in one of the stages. An interesting and informative story awaits you, a tasting of 8-10 types of crudely dried products with wine, made according to Balkan old recipes, a tasting of spices and homemade liquors.

There is a photo zone on the territory where you can take pictures in national clothes.

After the degustation, a real Bulgarian feast awaits you – a lunch of traditional dishes: Kurban-Kufte, meat dishes cooked in front of guests on a skara (grill), sheep’s cheese, lutenitsa (adjika) of their own preparation, traditional Bulgarian homemade cakes immediately from the oven, wine , kvass or uzvar. During lunch you will learn about traditional Bulgarian dishes, as well as about the features of Bulgarian cuisine.

17:00 – Отъезд в Одессу

21:00 – Arrival in Odessa.
